A Halloween Treat! 👻 Chocolate Pumpkin Almond Butter Cups (V,GF)
You are in for a real treat today! These are super delicious and good for you. I whipped them up super fast this morning in spirit of this spooktacular day. I hope you enjoy!
Ingredients (makes 3 mini cups):
2 tbsp cacao powder
1 tbsp coconut oil
1 tbsp + 1 tsp maple syrup
2 tbsp pumpkin puree
1 tbsp almond butter
A pinch of Himalayan or sea salt
A dash of cinnamon
Directions:
- Make the chocolate: combine coconut oil in liquid form, cacao, 1 tbsp maple syrup, & salt until you reach a smooth liquid consistency 
- Spoonful first chocolate layer into mini baking cups and place in freezer while proceeding to the next step 
- Make pumpkin almond butter: combine almond butter, 1 tsp maple syrup, pumpkin, & cinnamon until well combined 
- Spoonful pumpkin layer on top of chocolate layer 
- Spoonful remaining chocolate layer on top of that 
- Place in freezer for about an hour 
- Top with raspberry or whatever fruit or candy you like - Happy Halloween! 🎃
